Borago - The Best Thing I Ever Ate

I love watching the show on the Food Network called The Best Thing I Ever Ate! Were I to be a guest on the pasta version of the show, the Chicken Linguine from Borago would be my featured dish.
Borago’s Chicken Linguine is The Best Thing I Ever Ate. The pasta dish is in the same family as Fettuccine Alfredo, but a little lighter and a lot more delicious. Who can resist Fettuccine Alfredo anyway? Therefore, you KNOW Borago’s Chicken Linguine is THAT good.
Borago is located in Grayton Beach along Florida’s 30A. The restaurant serves traditional Italian food, but the bricks-and-mortar establishment does not feel traditional. It has a modern feel and an excellent cocktail menu.
THE Chicken Linguine
The Chicken Linguine sauce is cream-based but tastes and feels light. The perfectly cooked linguine noodles are coated in the perfect amount of creamy parmesan sauce. Tender grilled chicken pieces are mixed in along with pancetta, corn, shitake mushrooms, and caramelized onions.
The flavors! The textures! The crisp, tender, fresh corn is a delicious addition to this pasta dish. I feel peas are typical in pasta dishes (and truly loved by me), but corn is more unexpected. It complements the salty pancetta. The caramelized onions also play nicely with the pancetta and parmesan sauce. I don’t like mushrooms. I think it is a texture thing as I do enjoy mushroom sauces and other mushroom flavored dishes. However, I usually ask my server to leave the mushrooms out. If you are a mushroom fan, I’ll bet they add another delicious dimension to the dish.
The portion is huge. I always take-home half of my Chicken Linguine and have it for lunch the next day.

Everything at Borago is divine. The service is fantastic, and the remainder of their Italian-inspired menu provides excellent choices. I usually start my meal off with their Caesar salad. It is a traditional Caesar with crisp and cold romaine pieces with a tangy and perfect version of Caesar dressing.
Borago has a solid wine list, and a full bar with skilled mixologists. They used to offer a Bellini on the drink menu. They removed it from the menu before Covid. I miss that Bellini! Maybe one day they will bring back that peach perfection. In the meantime, I’ll continue to order a glass of champagne and the Chicken Linguine because it is The Best Thing I Ever Ate.
Borago is only open for dinner. Ensure you make reservations, especially during peak seasons on 30A. Borago is popular and not to be missed!
